Stuffed Pepper Burritos

Ingredients

6  Assorted Bell Peppers (Green, Red, Yellow, Orange)

2  cups Mexican cheese blend (shredded cheddar, asiago, monterey jack)

1  15oz can Black beans or Pinto Beans

1  ½ cup Shredded Lettuce

1  lbs Ground Turkey or Shredded Chicken

1  tsp Cumin

½ tsp Oregano

½ tsp Chili Powder

⅛ tsp Cayenne Pepper

3  cups Rice (white or brown)

2  tbsp chopped Cilantro

2  Roma Tomatoes

1  can Green Chiles mild

½ small White Onion

1  tbsp Olive Oil

Salt and Pepper to taste
